When the cooking takes place with a very high initial heat the starch gets burned within its shrivelled cells, and swelling is then possible only in those parts which have been least burned. The cohering principle is thus destroyed, and double or treble the quantity of roux becomes necessary in order to obtain the required consistency. But this excess of roux in the sauce chokes it up without binding it, and prevents it from despumating or becoming clear. At the same time, the cellulose and the burnt starch lend a bitterness to the sauce of which no subsequent treatment can rid it. From the above it follows that, starch being the only one from among the different constituents of flour which really effects the coherence of sauces, there would be considerable advantage in preparing roux either from a pure form of it, or from substances with kindred properties, such as fecula, arrow root, &c. It is only habit that causes flour to be still used as the cohering element of roux, and, indeed, the hour is not so far distant when the advantages of the changes I propose will be better understood—changes which have been already recommended by Favre in his dictionary.

2023.04.01 13:19 2620 Alright so I've been watching a lot of movies and TV shows lately and it's got me thinking, why do we even bother with all this stuff?

I mean sure, some of it's good, like that Breaking Bad show, proper tense that one. But then you got stuff like The Big Bang Theory. What's the point of that? A bunch of nerds making jokes about science, who cares? And don't even get me started on superhero movies, they make my head hurt.
Plus, have you ever tried watching a foreign movie? You spend the whole time reading subtitles instead of actually watching what's going on.
I reckon we should just go back to the good old days of radio plays. You can listen while you're doing something else, like cooking or cleaning. And you don't have to worry about the visuals, your mind can create 'em for ya.

For some background, my “roommates” are my uncle, aunt, and grandma so I can’t move out yet because I’m only 16 and have like no money. Anyway, they act like fucking children who don’t know how to clean up after themselves and it extra gross because they eat meat and whenever they cook their is meat all over. They make they biggest mess when cooking dinner which sucks for me because I wake up early and have to look at their mess whilst trying to make breakfast and it grosses me out so much that sometimes I feel like I’m gonna throw up. They don’t understand how much seeing the meat all over the counter and oven grosses me out and get mad when I say something because they “work all day and deserve to come home and rest”. This is the stupidest excuse because it’s not that hard to not make a mess in the first place. Like I don’t even understand how people get food everywhere when cooking unless they are a fucking toddler. They act like I don’t need to rest when I come home when I am in 5 AP classes during the weekdays and work on the weekends as well. They also always leave their dirty dishes on the counters and on top of the oven. Not only does this gross me out because of the dead animals and other products that were obtained by torturing animals, but they also waste so much food. I’m a huge environmentalist and it pisses me off because they always make like double or triple the amont of food then what they eat and then they throw away all the leftovers because my uncle is a huge germaphobe (he also uses a shit ton of paper towels and paper plates). For example, when I went downstairs this morning to make my breakfast their was two basically full bowls of spaghetti and meatballs on the counter, a pan of meatballs on top of the oven, and meatball pieces inside of the fridge. It’s so disgusting and it literally makes me cry sometimes Most of this is just my uncle but my grandma also pisses me off because everyday she will start composing about how she’s tired of eating chicken all the time. I’m like okay then I can make you what I eat or something else that’s vegan and she will give me a dirty look as if that’s the most disgusting thing she’s ever heard. I tell her to stop complaint to me about it because it grosses me out but she won’t stop. Everyday she will tell me what they are having for dinner or start stressing out because she can’t rescued to feed her man child of a son who doesn’t even like her cooking because he’s a germaphobe and will literally throw out a whole meal and spend $50 on chick fila if he sees her touch the food with oven mitt. I tell her to stop talking to me about them eating dead animals and will explain how the animals are treated but she gets so mad at me for “pushing my beliefs on her” she did this with religion as well even though she is the one who always brings it up. I just wish I had vegan friends to talk to but I’m a 16 yr old in Ohio so that’s like impossible, which is why I’m posting my rant

I play a lot of video games, read the occasional book, and watch a lot of movies/shows. When I’m not doing that, I’m doing chores and cooking dinner and just generally taking care of things around the apartment.
I enjoy listening to music, and discovering new music!
I’m politically very left-wing and will not tolerate any right-wing fascist bullshit. Other than that I’ve been told I’m easy-going, and that’s how I try to be. I go into situations with a very laid back but alert attitude. I want to help people as much as I can.
I’m into collecting games. PS3 games are my main focus right now. But the PS1 is a big one too, as it was my first console way back in the late ‘90s. I collect other games as well, but my heart is full of PS1 and PS3 nostalgia. I’m also getting into collecting toys I had growing up. It’s just nice re-connecting with a part of my life that I don’t really have a lot of detailed memories of. Plus, it’s also nice to look at my shelves and pick out something and look at it and remember.
You don’t have to be into games to chat, but that is the one topic I’m most knowledgeable in, so it helps.
I’m down to talk about anything. Politics, life, ideas, memories… whatever you want. If you are passionate about a topic, I’d love to hear about it.

Hi all. This will be long sorry for the long vent.
I have been battling depression since a very young age for a lot of traumatic reasons.
When Covid hit I started to feel very unwell and depression for the first time took full control of me and made me not being able to take care of myself. I don’t know how I managed to do it since I was all alone in this journey, I was alone and did not have money to seek therapy, and it took me two years to be able to get back to my feet again and finally go out to live and start living. I remember there was days I cried over my muscles hurt for not moving from the bed but I did yoga in bed and cried during the sessions but I kept moving until I stood up again.
I started to bath more often, cook proper food, workout regularly and did many things in those two years until I started being able to work again.
Six month ago I did the first step and got myself into a job, it was extremely hard to go, having depression makes everything difficult. talking take energy, moving takes energy, seeing takes energy, and hearing takes energy, but I kept fighting and pushing myself to go so I can finally go seek the help I need and be able to pay for therapy.
But life does not give me a break, and one day right before my first day at work my dad had a suspected stroke and that changed everything. I needed to pose my healing and focus with my dad. Our family is not big and we don’t make much money, so I started to save some money for the therapy and kept the majority to my father for his recovery process.
Everything was going great and I was helping him along of trying to keep myself steady, and not go into another relapse, it was hard but manageable.
Until last December, after three month of his suspected stroke he got a real stroke which lead him to making his left side half paralysed temporarily and the doctor told us it will take a long time for him be able to walk and move this left hands again maybe never.
After that, for the past three month I am a caregiver to my dad, not the primary because we have a home nurse for 12 hours who help my dad with going to physiotherapy, and bath and cleaning. But after the nurse I am the second. I take care of almost everything every single day. cleaning the house, prepare food, cooking, grocery, check medical appointments, prepare medication, laundry, dishes, and basically anything that my dad needs + work and sleep deprived.
My sister take care of some other stuff as well and sometimes she help me with my part but since I have depression and I already need help, anything I do that may seem easy take 10 times effort for me.
This leaded to another self neglect loop. With depression I always say to everyone you need to sacrifice something to be able/have energy to do something else. For example I something sacrifice making food for myself to have energy to make my dad his favourite food and so on. I can’t do both since it takes a lot of energy to do anything.
Right now I am mess, I go to work with messy hair, not focused, I barely move and I can’t take proper care of myself. Doing so means I will not take care of my dad.
I also feel very guilty that I don’t spend my weekend with him anymore or talk to him much. I used to wait for the weekend or after work to stay and talk with him and be with him, but now and for three weeks all I do is making sure he have his favourite show on, ate dinner, talk to him for few hours and then go to bed and scroll my phone till going to sleep. And on my weekend all I do is stay in bed not being able to move just prepare the house for the next week and prepare his stuff and that’s it, I go to my room and don’t spend anytime with him due to being exhausted to talk or communicate in anyway and he started to tell me you don’t want to spend time with me. This is why it took me two years to work again, depression was so strong to the point I couldn’t get out of bed to shower so imagine how it feels now. I am burning myself but I find it not enough because he need more better care. He deserves attention 24 hours. Which I can’t give.
Right now I don’t watch my food, or sleep, or workout, or do anything that is needed to fight depression. And after three month I started to break. My dad need emotional, physical, and financial care. Which I gave it all for 6 month now. But I broke down today when I saw that I have almost zero dollar on my saving account and that means all of my savings for therapy is gone. I am 26 and still didn’t start living my life properly due to depression and having a very traumatic life, but when I did an attempt the one person I care about fell down and this is killing me slowly.
I don’t know what I should do but I know I can’t keep going like that. I need help myself.
I need to mention, I saved my dad on September when he had the suspected stroke, he was going to very dangerous area that may have harmed him, my dad is overweight and I am very small and fatigued most of the time, but that day I was in a depressive episode which made my body extremely weak, but I managed to grab him and pull him into the nearest room and look ourself in it and called the emergency. This experience made my depression worse but I had to numb myself for my dad, to be able to help him. The second time it was also me who was there, I was also alone with him and not feeling well again, I didn’t feel that he is well something was off but this time I called my sister and we managed to let him inside the car and then it was a stroke. Another trauma.
I feel that my life is just trauma. I don’t remember anytime I was doing well without pain no never.
I feel that by the time I am forty I will be more sick due to neglecting myself so badly and that will lead to a circle of being sick or taking care of someone who is sick. My dad is 72, I am 26, but it feels I am way older. Trauma aged me and not in a good way. I always felt like I am the parent for my dad and now it is even more with the stroke.
I feel bad for my dad and my life and selfish for thinking about myself and for having depression that makes me not being able to give more to my dad.
He needs me emotionally. And for someone who is drained this is impossible and I hate that.

As for some info about me:
For interests, well I’ve always done sports so can for sure talk about those and am always down te learn new things(be it sports or non-sport related ofc). I’ve also done quite a bit of travelling and plan on doing that alot more, though wasnt really possible with the whole pandemic which sucked but it is what it is…
As for everyday stuff, I’m a student so usually a part of my day goes to that, especially with exams coming up! Not the most fun always but well everyone has to go through it I guess… Though going out and everything surrounding uni makes up for the studying so thats good! So yeah with that I also like just going out with friends or going out in general, be it at someone’s place a cafe,…
Next I can also just talk about most current things or other people’s interests, got some ideas about games, anime and all that if need be! Oh music is also a big one, I’d say try your best to find me new music as I listen to as good as everything! And for sure am always on the lookout for some new stuff.
